ows.zip is the archive containing the dataset based on the dataset providen by Orkney to Jeff, the mapfile and symbols.sym. You just need to uncompress the archive in your OSGeoLiveDVD /var/www directory to get the data through WMS/WFS which is required by the Workshop.
